Make Cajun-style smothered potatoes

Beryl Stokes shows how to make 'Smothered Potatoes' in this video. She begins by peeling the skin of 8 medium white potatoes. Next, she cuts a potato in half and thinly slices it. The same is done for the remaining potatoes. The potato slices are soaked in water to prevent them from turning red. Next, 3 tablespoons of softened butter is taken in a pan. Now 3 tablespoons of flour is added to the melted butter, a little at a time and the mixture is whisked well. Next, 2 cups of milk is added gradually to the pan and whisked nicely, to make white sauce. The mixture is cooked for 8 minutes. 8oz of sour cream is added to the white sauce and blended well. Next, a cup of shredded cheddar cheese is added to the sauce and mixed well. Some seasoning is added; along with finely cut green onions. The gas is turned off and the sliced potatoes are drained. Next, about half of the sliced potatoes are placed in a well greased baking dish. Half of the sauce is poured over the potatoes. Now the other half of the potatoes are put on top of this layer and completed by pouring the remaining sauce over them. The dish is then baked in a preheated oven at 350 degrees F, covered for 30 minutes. It is continued to be baked uncovered for 30 minutes. Delicious smothered potatoes are now ready to be relished!
