How to Make Stuffed Spaghetti Squash

Trying to stay away from carbs but love starches? Why not try some spaghetti squash instead of all that pasta? Spaghetti squash is easy to prepare and can be garnished just like you would with pasta or potatoes.

In this tutorial, learn how to make a delicious stuffed spaghetti squash! The squash is baked and with all the veggies and lean turkey sausage, you will have a delicious low calorie, low fat dinner that your whole family will love!

Makes 2-4 servings.

You Will Need:

  • 1 spaghetti squash
  • 2 tsp. olive oil
  • 1/2 c. diced onion and red pepper
  • 1 garlic clove or equivalent
  • 12 oz. turkey sausage
  • 1 can diced tomatoes
  • 1/4 tsp. oregano
  • Dash salt and pepper
  • 2 oz. shredded Mozzarella, Feta, or Cheddar cheese
  • 1 tbsp. chopped Italian parsley

Preheat oven to 350 degrees.

Cut squash in half lengthwise and scoop out seeds and pulp. Fill baking dish up 1 inch with water. Place spaghetti squash halves face down in baking dish and bake for 45 minutes or until squash is easily pierced with a fork.

Remove from oven and let cool. When squash has cooled, remove the meat with a fork and set aside.

In skillet heat oil. Add onion, red pepper and garlic. Sauté until onion is translucent. Stir in turkey sausage, sauté until meat is no longer pink, add tomatoes, seasonings and reserved squash pulp and cook, stir occasionally until liquid is absorbed.

Spoon half of mixture into a shell. Place shells in baking dish and bake 20 minutes. Sprinkle cheese on each one and then broil until melted and browned. Serve with sprinkled parsley.
