Here's Amol Shambharkar to show you how to make eggplant parmesan, which is a cheesy bake with aubergine. Amol works at Cibo, Hotel Janpath. To start, he makes a batter and then slices the eggplant into thick slices. Once he has dipped them in the batter, he fried them. While they are frying you can make a sauce with tinned tomato, onion, celery and garlic. When they've finished frying, place them on a dish with a tablespoon of the sauce on top. Then, add mozzarella and parmesan reggiano cheese, grated. Bake for ten minutes. Garnish with fresh basil. Enjoy!
