Make raw marinated vegetables

The Raw Food Coach, Karen Knowler, shows us a very simple marinated vegetables recipe that makes a good alternative to salads or steamed vegetables. The raw vegetables used for this recipe are leeks, broccoli, zucchini (also known as courgette), and tomatoes. Suggestions for substitute vegetables, such as bell peppers and cauliflower, are also given. First we're shown us how to properly chop these vegetables and mix them together in a way that is pleasing to all the senses, including the eyes. Suggestions are mentioned for other ways to eat raw broccoli beyond this recipe, as many people don't know how to eat broccoli raw. Next we're shown us how to marinate the raw veggies by tossing them with olive oil and then lemon juice. A recommended alternative to the lemon juice is apple cider vinegar. It's explained how the lemon juice or apple cider vinegar provide acid to help break down the vegetables as well as giving them an extra tang. Finally, we're given some suggestions for how to top the dish off, such as with Italian herbs, fresh herbs, or curry powder. After letting the dish stand for a few hours to soak in and absorb the marinade, just put into the fridge where it's ready to eat. Simple and delicious as a side dish or a meal on its own.
