Make Mediterranean-style stuffed cabbage

In this tutorial Maria shows how to make Mediterranean-style stuffed cabbage by just using a few simple steps. For this recipe you will need: 1 pound ground beef, 1 cup round grain rice, 4 tablespoons chopped parsley, 1 1/2 tablespoons all spice, 1 teaspoon black pepper, 2 head garlic, 1 tablespoon dry mint, 1 tablespoon paprika, 3 or 4 crushed garlic, 1 medium chopped onion, salt, 15 oz of tomato sauce, 2 squeezed lemons or limes, and 1 large head of blanched cabbage cut into sections. The first step is to cook your cabbage sections in boiling water until soft; this should take a few seconds for each batch of cabbage leaves. Maria suggests in the video to do the previous step the night before since it is the most time consuming part of making the stuffed cabbage. Your next step is to mix the beef, rice, parsley, mint, paprika, all spice, black pepper, onion, salt, and crushed garlic in a large bowl. Once these ingredients are mixed well add in your tomato sauce and mix. Finally, mix in the lemon/lime. Now lay out your first piece of cabbage, spooning about a tablespoon of the meat mixture into the leaf, and shape. Fold the cabbage in from the short sides and then roll from end to end, tucking under the loose end. Continue this step until all cabbage is stuffed. Finally, place cabbage rolls in a circular pattern on the bottom of a large boiling pot until the bottom is covered. Spread heads of garlic on top, repeat steps until the pot it full. Add a pinch of salt and water until it reaches over all of the cabbage rolls. Place a plate on top of the water and press down. Cover your pot and cook for 30 mins, or until rolls can be pushed through easily with a fork. Top with Greek yogurt if desired.
